Hake in cider

This recipe mixes the delicate flavour of hake with sweet cider to produce a delicious Asturian fish dish  

Time preparation: 40 minutes

 Ingredients:Ingredients for 4 people

·        1 kg  hake

·        1/4 kg  clams

·        the yolk of 1 hard-boiled egg

·        ½  lemon

·        1 large onion

·        2 cloves of garlic

·        1dl  tomato sauce

·        1dl  fish stock

·        1dl  cider

·        olive oil

·        flour

·        parsley

·        salt 
Prepare four steaks of hake by cutting the loin into four pieces. Put them into the lemon juice and  marinate for a few minutes. Then dry, season and flour the pieces of fish. Fry them in a frying pan with olive oil on both sides, turning them over, and put aside. Lightly fry the garlic and chopped onion and add the tomato sauce. Mash up the hard egg yolk with some parsley leaves and a little cider in a mortar. Add this into the fried vegetables, together with the fish stock, the clams  and the rest of the cider. Put the fish into a casserole dish with the sauce. Leave on to a low heat for a quarter of an hour, moving the dish from time to time so that it does not stick.
